Sebastian Ramirez is renowned for producing complex, desirable and delicious coffees. Our second coffee from Sebastian this year is another exciting one. As a drinking experience, the body is medium, round and silky with a syrup-like texture. The aftertaste is long-lasting, sweet and fruity.

El Placer means "The Pleasure" in English. The farm is located in the heart of Colombia's "coffee cultural landscape" UNESCO World Heritage Site in the centre-western part of Colombia at an elevation of 1744 metres above sea level.

Pink Fruits Honey: Processing

After harvesting, the cherries are sorted; 95% ripe and 5% semi-ripe are selected. The specially selected cherries are placed in fermentation tanks for 120 hours at 18 degrees, and at 72 hours, they're injected with CO2. A range of dehydrated fruits, and fruit glucose are added and left to ferment anaerobically.

After fermentation, the coffee is laid to dry under a canopy at 40 degrees. A second drying phase under shade follows for approximately five days.
