This Rio Bamisa lot is a part of Qima’s Competition and 90+ series, a category of some of the best coffees emerging from Colombia. It was grown on an altitude of around 1,700-1,800 MASL in Acevedo, a town within the Huila department, situated in southwestern Colombia, and comprises Geisha that has undergone natural processing. The lot name honours the river Bamisa that runs adjacent to the the fincas, which grow geishas, geisha mutations, SL28, Aji, Bourbon, Ombligon, and more exotic varieties. The coffee farming community here is organised, distinguished and well-recognised for their green thumb – in growing a range of varieties and tending to exotics – and their proficiency with processing, where they tweak drying times or fermentations to achieve novel profiles.
Processing;
Once the coffee cherries are received, the cherries undergo a water-based treatment to eliminate defects and are ready for fermentation, which runs between 2-3 hours. Finally, the cherries are transferred for drying until the moisture content within reaches 10-11%. Following this, the coffee beans are extracted from the cherries.
