Lala Salama means 'Sleep Well' in Swahili, there couldn't be a more fitting name to bestow upon our new regular feature of Sparkling Water Decaffeinated coffee from the African continent
The characteristic flavour profile is truly unique to this terroir, after receiving the coffee as parchment from many washing station the guys at Rwandan Trading Company meticulously cup the lots and select the ones that are going to be part of the signature blend.
Rwanda is blessed with ideal coffee growing conditions that include high altitude, regular rainfall, volcanic soils with good organic structure and an abundance of Bourbon. The vast majority of Rwandan coffee is produced by smallholders of which there are thought to be around half a million with parcels of land often not much larger than just one hectare per family.
This lot has been decaffeinated using the sparkling water process or CO2 method. The CO2 acts like a magnet to the caffeine molecules, extracting it from the beans. The water is then drained into an evaporator which precipitates the caffeine rich carbon dioxide out of the water. This cycle is repeated until the caffeine level is low enough to be classified as decaf.
